Researchers at Louisiana State University say they've solved the mystery of why dark chocolate is good for us.
Using a model to simulate digestion, they discovered compounds in chocolate are absorbed by so-called good bacteria in the stomach. These microbes then grow and ferment, producing anti-inflammatory compounds.
When these compounds are absorbed by the body, they reduce inflammation of cardiovascular tissue and decrease the risk of long-term stroke.
Scientists say combining dark chocolate with fruits like pomegranates and acai could provide even greater health benefits.
