Wegmans is breaking new ground with an industry first. This week, Wegmans began full operations at its cheese caves.
They call it a one of a kind, high-tech building that mimics the famous cheese caves in Europe. Wegmans says it could become a game-changer in the way artisanal cheeses are finished and sold.
Cathy Gaffney, Wegmans Director of Specialty Cheeses, said, "Our customers will get a cheese that's absolutely perfect with the taste and texture they prefer every time."
Wegmans says the caves will house only soft cheeses because of the extra care they need in the aging process.
